Homemade Spaghetti Noodles

Prep Time: 20 minutes

Rest Time: 10 minutes

Cook Time: 2–4 minutes

Servings: 4

  • Lightly flour your work surface and rolling pin before rolling out the homemade pasta dough.
  • Make a well in the flour and add the eggs to begin making fresh homemade spaghetti dough.
  • Two eggs cracked into a well in flour on a kitchen countertop for homemade pasta dough.

Ingredients

  • 2 cups all-purpose flour

  • 3 large eggs

  • 1 tablespoon olive oil

  • ½ teaspoon salt

  • 1–2 tablespoons water, if needed

Instructions

Step 1: Make the dough

Place flour on a clean countertop or in a large bowl. Make a well in the center and add eggs, olive oil, and salt.

Using a fork, gradually mix the flour into the eggs until a dough begins to form.

Step 2: Knead

Knead the dough for approximately 5–7 minutes until smooth and elastic. If it feels too dry, add water a teaspoon at a time.

Step 3: Rest

Cover the dough with plastic wrap or a clean kitchen towel. Let rest for 10 minutes.

Step 4: Roll the dough

Divide dough into 2–4 portions. On a lightly floured surface, roll each portion as thin as possible using a rolling pin.

Step 5: Cut the spaghetti noodles

Lightly dust the rolled dough with flour. Fold it loosely into a flat roll and use a sharp knife to cut thin strips.

Unfold the strips and gently separate the noodles, adding a little flour if needed to prevent sticking.

Step 6: Hang the noodles to dry

Carefully drape the fresh spaghetti noodles over a pasta drying rack, spreading them out so they don't clump together. Let the noodles dry for about 10–20 minutes while you prepare your sauce and bring a pot of water to a boil.

Tip: If you don't have a pasta drying rack, you can lay the noodles in loose, lightly floured nests on a clean kitchen towel or baking sheet.

Step 7: Cook the noodles

Bring a large pot of salted water to a boil. Add the fresh spaghetti noodles and cook for approximately 2–4 minutes, depending on their thickness. Taste a noodle to check for doneness.

Drain and toss immediately with your favorite sauce.

Sizzling Lime Tips

  • For thinner noodles, roll the dough as thin as possible.

  • Don't skip resting the dough. It makes rolling much easier.

  • Fresh pasta cooks much faster than dried spaghetti.

  • Toss with olive oil if you're not adding sauce immediately.

My recommendation

For a quick homemade spaghetti dinner, toss these noodles with olive oil, fresh garlic, crushed red pepper flakes, fresh parsley, and Parmesan. A little heat and plenty of flavor!

One important thing: If you're making these for tonight's dinner, you can prepare the dough while your sauce simmers. Fresh pasta really doesn't take long!
