We made this on a whim, but wow, was it a crowd favorite. This is a quick Mexican Pizza that anyone can make from the ingredients they have in their kitchen pantry. Super, delicious, and customizable.



Our son called us with great news about his day at school. We were so proud of him and wanted to celebrate his success. When we asked him what he wanted to make, his surprising choice was Mexican Pizza! So, after thinking about what we had on hand, we decided that we could take a shot. The kids joked that we deserved a Michelin Star! Try this recipe for a quick fun meal that is easily customizable for the kids and the adults.

This is a recipe that is delicious, flavorful and will be a hit for everyone in the family. The best part was bringing everyone into the kitchen as they created their perfect custom pizza.



Ingredients


Flour Tortillas - They have a mild taste compared to corn, plus they are soft but when lightly browned can hold up to lots of ingredients.


Vegan Ground "Beef" - We didn't have ground beef defrosted, so we opted for vegan beef that we could cook quickly from frozen. It is quick to cook, still has flavor, and doesn't pack cholesterol or saturated fat like real ground beef.


Yellow Onion - They are affordable and versatile while cooking them.


Garlic - Not only does it have a great scent when cooked, but it also adds a savory taste to any meat.


Refried Beans- While not always possible, we try to stay away from cans. For this recipe, we used a bag of organic refried beans we had in our pantry.


Beefsteak Tomatoes - They are hearty, but also have great flavor.


Monterey Jack Cheese- It melts beautifully, creating a smooth, creamy layer with a mild flavor that complements the pizza perfectly. We recommend buying a small block and shredding it yourself instead of using pre-shredded cheese, since it’s a healthier option with fewer additives and holds a better melt quality.


Taco Seasoning - We used our favorite, high quality store bought Taco Seasoning. It gave our vegan "beef" a smokey, savory, and Tex-Mex flavor.


Taco Sauce - Instead of adding a marinara to a pizza, the taco seasoning adds authentic taste, a flavor boost, and savory taste. We only had hot taco sauce so our daughter skipped it, but the rest of us enjoyed the kick.


Avocado Oil -We lightly sprayed on the pan before cooking each shell to prevent sticking while adding a neutral flavor and a high smoke point that’s ideal for baking.


Pepper Jack Cheese (Optional) - This is the cheese that we choose, in lieu of the Monterey Jack Cheese. It melts gooey, while providing some zest that we love. Just like the Monterey Jack Cheese, we recommend buying a small block and shredding it yourself instead of using pre-shredded cheese, since it’s a healthier option with fewer additives and better melt quality.


Black Olives (Optional) - A traditional addition to Tex-Mex topping that adds a briny flavor.


Red Onions (Optional) - They have a mild and savory flavor that we love, while adding good color.


Queso Sauce (Optional) - We found some leftover in the refrigerator and found that it gave the pizzas a rich flavor that we spread on the bottom shell of the pizzas.


Hot Sauce (Optional) - We always consider a hot sauce. We picked one that pairs perfectly with our pizza.


Cilantro (Optional)- We add the cilantro for the fresh green color, but also for the citrusy taste to contrast the savory cheese and refried beans.

Crispy Mexican Pizza at Home

Makes 4 Pizzas

Ingredients

  • 8 tortillas

  • 13.5–16 ounces preferred vegan ground beef or regular ground beef

  • 1 bag or can refried beans

  • ½ yellow onion (Spanish onion works well)

  • 2–3 garlic cloves, minced

  • 1 packet taco seasoning

  • About ⅓ bottle taco sauce

  • ½ beefsteak tomato, diced

  • ½ block fresh Monterey Jack or Pepper Jack cheese, grated


Optional Toppings


  • Black olives, to taste

  • Hot sauce, to taste

  • Red onion, diced

  • Fresh cilantro

Cooking Notes


We used two pans—one to brown the tortillas and one to cook the meat—so everything was ready at the same time. If you’re using only one pan, start with the tortillas first and set them aside.

Instructions


Step 1: Preheat the oven

Preheat your oven to 400°F. This allows the pizzas to heat through and melt all the layers together.


Step 2: Brown the Tortillas

Lightly spray a pan with avocado oil. Once warm, add a tortilla and cook for 1–2 minutes per side, until lightly golden and crisp.


Set aside and let cool before assembling the pizzas.


Step 3: Start with the Aromatics

Heat a small amount of oil in a pan. Add the onions and cook for about 5 minutes, until soft and translucent.


Step 4: Add the Garlic

Add the garlic and cook for 1 minute, just until fragrant.


Step 5: Add the "meat"

Add the ground meat (or vegan alternative) to the pan with the onions and garlic.


Step 6: Add the Seasoning

Stir in the taco seasoning and 1 cup of water. Simmer for 5-10 minutes until the mixture thickens and reaches 165 degrees.


Step 7: Remove from heat.

Remove the meat mixture from heat and set aside.


Step 8: Build your pizza!

We make two versions—kid-friendly and spicier adult pizzas.

Kid Version:

  1. Place a tortilla on a plate. Spread a thin layer of queso cheese on top.

  2. Add a layer of the meat mixture.

  3. Sprinkle a small amount of freshly grated Monterey Jack cheese over the meat to help the layers stick.

  4. Add the top tortilla and brush with taco sauce.

  5. Cover with more freshly grated Monterey Jack cheese.

  6. Transfer to a baking sheet fitted with a cooling rack.

  7. Bake for 3–5 minutes, until the cheese is melted and bubbly.


Adult Version:

  1. Place a tortilla on a plate and spread with refried beans.

  2. Add a layer of the meat mixture.

  3. Sprinkle freshly grated Pepper Jack cheese over the meat.

  4. Add the top tortilla and brush with taco sauce.

  5. Cover with more Pepper Jack cheese.

  6. Bake for 3–5 minutes, until bubbly and melted.

  7. After baking, top with tomatoes, red onion, and fresh cilantro.


Step 9: Cut and Serve

Cut each pizza into quarters and serve warm.
