Pre-Cooked Cubed Frozen Chicken- We usually prefer fresh chicken over pre-cooked options, but it can be incredibly convenient. It works perfectly for quick meals like soup when you need something fast. We chose the healthiest brand we could find and simply heated it, making this soup quick and easy for our sick child.
Organic Chicken Broth- We prefer low-sodium chicken broth so we can control the salt level ourselves, but any good-quality chicken broth will work. Since broth is useful in so many recipes, we always keep some stocked in our pantry.
Avocado Oil- We prefer avocado oil for cooking the aromatics because of its high smoke point. Unlike olive oil, avocado oil won’t break down as quickly at higher temperatures. We find the health benefits worth it, but extra virgin olive oil works well too.
Yellow Onion- Yellow onions are affordable, versatile, and add a great base flavor when sautéed.
Garlic- Garlic adds a wonderful aroma and a rich, savory flavor to the soup, plus it comes with several nutritional benefits.
Crushed Red Pepper Flakes- Adds a quick kick of heat and extra flavor. You can easily adjust the amount depending on how spicy you like your soup.

Ingredients
6 ounces pre-cooked cubed frozen chicken
32 ounces organic chicken broth
1 tablespoon Avocado Oil
1/4 yellow onion, minced
1 to 2 garlic cloves, minced
1/4 tablespoon red pepper flakes
1/2 tablespoon grated Parmesan cheese
1/8 tablespoon thyme
1/2 tablespoon garlic and herb seasoning
1 tablespoon black pepper
1 cup ditalini noodles
Step 1: Build the Aromatics
In a soup pot, warm the avocado oil over medium heat. Add the diced onion and cook for 3–5 minutes until softened and fragrant.
Step 2: Sear the Chicken
Add the frozen cubed chicken and cook for about 2 minutes to lightly sear it. Stir every 30 seconds.
Step 3: Finish the Aromatics with Garlic
Add the minced garlic and cook for about 1 minute, stirring frequently so it doesn’t burn.
Step 4: Add the Broth and Spices
Stir in the chicken broth, red pepper flakes, thyme, garlic and herb seasoning, Parmesan cheese, and black pepper. Bring the soup to a light boil, then cover and reduce the heat to a simmer.
Step 5: Prepare the Noodles
In a separate pot, cook the ditalini noodles according to the directions on the package. We cook the noodles separately to keep them from becoming soggy in the soup.
Step 6: Serve
Add the cooked noodles to the bottom of each bowl and ladle the hot soup over the top. Finish with a sprinkle of extra Parmesan cheese if desired.
