This masoor dal is hearty, flavorful, and easy to make, with just the right balance of spice and comfort.


We love trying new cuisine from different areas of the world. We love lentils for their high protein and fiber, so we found different lentil recipes we had to try. We found lentil dishes from the Middle-East and really enjoyed them. We tried different variations and came up with this version. It is quick, nutritional, tasty, and you can control the heat.


This easy masoor dal is the definition of cozy comfort—earthy lentils simmered until tender and infused with warm spices for depth and richness. Simple ingredients come together in one pot, making it perfect for a relaxed meal. Finished with a gentle heat, it has just enough kick to keep every bite exciting while still feeling nourishing and homey.

Simple Spiced Masoor Dal of Ingredients

Masoor Dal (Red Lentils) - Known for their soft texture and mild, slightly sweet flavor, red lentils cook quickly and create a naturally creamy base that makes this dish perfect for all tastes.

Avocado Oil - We prefer avocado oil for sautéing the aromatics because of its high smoke point. Unlike olive oil, it holds up well at higher temperatures. We find the health benefits worth it, but extra virgin olive oil works well too.

Cumin Seeds - Essential for building flavor, cumin seeds add a warm, robust tone and a rich aroma that enhances the depth of the dish.

Yellow Onion - Adds natural sweetness and savory balance to the lentils as it softens and caramelizes.

Garlic - Brings bold, savory flavor while offering health benefits, including digestive and blood-pressure support.

Ginger - Adds a pungent, slightly spicy brightness that balances the earthy flavors and enhances aroma.

Vine-Ripped Tomatoes - Provide acidity and tangy freshness while adding body and texture to the dal.

Green Chilis - Add a subtle smoky heat that brings the dish to life without overpowering it.

Cumin Powder - Reinforces the warm, earthy base flavor of the lentils.

Coriander Powder - Slightly citrusy and peppery with a gentle floral note that lightens the spice blend.

Turmeric Power - Adds earthy depth and vibrant golden color, along with well-known anti-inflammatory and antioxidant properties.

Harissa Powder - This North African and Middle Eastern spice blend adds smoky heat and complexity. We discovered it by accident and now love using it in Middle Eastern–inspired dishes.

Cayenne Powder - Adds direct heat and contrast to the earthy base. One of our favorite spices because you can easily adjust the spice level.

Red Pepper Flakes- Adds heat without overtaking the flavor of the dish. This is our go to spice to add a kick to just about any dish.

Pink Himalayan Salt - Enhances flavor while offering a slightly milder taste compared to traditional table salt.

Lemon Juice - Brightens the dish with clean acidity and a fresh citrus finish. We prefer fresh, but store bought just will work fine.

Fresh Cilantro - Adds a fresh, citrusy, slightly peppery note that complements the earthy lentils beautifully.

Garam Masala - Adds warmth, depth, and aromatic complexity that pairs perfectly with the creamy texture of the dal.

Purple Rice- Fragrant and visually stunning, purple rice adds a rich, nutty flavor and beautiful color to the plate. It’s also packed with antioxidants. White or brown rice can easily be substituted based on preference.

Roti- A traditional Indian flatbread that pairs perfectly with masoor dal, ideal for scooping up every bite. Naan is also a delicious alternative..

Cucumbers- Provide a refreshing, cool crunch that contrasts beautifully with the creamy, spiced lentils.

Red Onion- Adds a sharp, slightly peppery bite that enhances the overall flavor balance.

Tomatoes- Contribute fresh texture and bright acidity to lighten the earthy richness of the dal.

Julienned Carrots – Add vibrant color, subtle sweetness, and visual appeal to create a well-balanced, beautiful plate.

Butter (Optional) - A small amount can be stirred in at the end for added richness, though we typically keep this dish dairy-free.

Simple Spiced Masoor Dal


Makes 4-6 Servings


  • 1 cup masoor dal

  • 1/2 cups water

  • 2 tbs avocado oil

  • 1/2 yellow onion 

  • 1 tsp cumin seeds 

  • 3-5 cloves garlic, minced

  • 1 inch of ginger, minced

  • 2 small vine-ripped tomatoes, finely chopped

  • 1 4 ounce can of green chilis, drained

  • 1 tsp cumin powder

  • 1 tsp coriander powder

  • 1 tsp turmeric power 

  • 1 tsp harissa powder

  • 1/2 to 1 tsp cayenne powder

  • 1 tsp red pepper flakes (more if you like a bigger kick)

  • 1 tsp pink Himalayan salt

  • 1 tsp lemon juice

  • 2 tbs fresh cilantro

  • 1/4 to 1/2 tsp garam masala

  • 1 tbs butter (Optional)

  • 1/2 cucumber, diced (topping)

  • 1/4 red onion, diced (topping)

  • 1/2 tomato, diced (topping)

  • 1/2 carrot, julienned (topping)



As this Indian masoor dal simmers, it becomes the perfect comfort food — fast, simple, and packed with bold, spicy red lentil flavor.

Step 1: Cook the Purple Rice and Preheat the Oven


Cook the purple rice according to the package instructions. While the rice cooks, preheat your oven to 400°F to warm the roti later.


Step 2: Rinse the Lentils


Thoroughly rinse the masoor dal to remove dirt and excess starch. You can either:

  • Place the lentils in a bowl, cover with water, swirl, drain, and repeat until the water runs clear, or

  • Rinse in a fine mesh strainer under running water until clear.


Step 3: Cook your Masoor Dal

Add the rinsed lentils to a pressure cooker and cook on high pressure for 5 minutes. Manually release the pressure when done.


Alternatively, cook the lentils according to the package directions if not using a pressure cooker.

Step 4: Build the Aromatics

In a large pan over medium heat, add the oil and heat until shimmering.

Add the cumin seeds and sauté for about 15 seconds until fragrant.


Stir in the diced yellow onion and cook for about 5 minutes until softened. Add the garlic and ginger and sauté for 30 seconds.


Next, add the tomatoes, green chilies, cumin powder, coriander powder, cayenne, red pepper flakes, turmeric, harissa powder, and salt. Pour in ¼ cup water and cook for 3–5 minutes until slightly thickened and fragrant.

Step 5: Combine with the Lentils

Bring the mixture to a gentle simmer and cook for 5 minutes, allowing the flavors to meld. Adjust salt as needed.

Step 6: Simmer & Develop Flavor

Bring the masoor dal to a simmer and let the flavors combine for 5 minutes, add salt if needed.

Step 7: Add Butter (Optional)

If using butter for extra richness, stir it in now until melted and incorporated.

Step 8: Finish with Fresh Ingredients

On low heat and stir in the lemon juice, chopped cilantro, and garam masala. Mix well to blend the bright and warm finishing flavors.

Step 9: Warm up the Roti!

Place the roti in the preheated oven for 3–5 minutes, just until warmed and lightly browned.

Step 10: Plate & Serve

In a shallow bowl or plate, arrange:

  • Purple rice on one-third of the plate

  • Masoor dal on another third

  • Quartered roti on the remaining space

Finish with fresh cucumbers, julienned carrots, chopped tomatoes, and red onion for color, texture, and balance.
