Easy Slow Cooker Chicken Tortilla Soup!
Inspired by a recipe we have made so many times. We can practically do it by heart, it’s the kind of soup we make when we are craving something spicy and comforting. It’s loaded with tender chicken, sweet corn, and black beans, all simmered in a deeply flavorful tomato-onion broth with just the right amount of smoky heat. This hearty, protein-packed soup is rich in fiber, and delivers serious comfort while still feeling nourishing. Finished with a squeeze of lime, tortilla strips, and whatever toppings you love, it’s easy to customize, quick to make, and perfect for using up leftovers—everything a great weeknight soup should be.

Chicken Tortilla Soup Ingredients
Here is everything you will need:
Uncooked, Organic or Pasture-Raised Boneless, Skinless Chicken Thighs- Not all chicken is created equal. When possible, we only use the highest quality chicken we can buy.
Spanish or Yellow Onion- We prefer a Spanish Onion because it provides a bite without being overpowering, but both will pair well.
Fresh Garlic Cloves- It adds strong flavor with added health benefits.
Ear of Fresh Corn – Fresh corn adds a crisp texture, but frozen corn is a good substitute as well.
Chicken Broth- We use organic, reduced sodium for our soups we eat at home. When we take our soup to a party, we use organic, full sodium broth.
Diced or Crushed Tomatoes – We like a can of fire roasted tomatoes to add a smokey and charred flavor.
Green Chilies – It adds a bright and tangy flavor to the soup.
Chili Powder- You can never go wrong with the earthy flavor in a Mexican inspired soup.
Pink Himalayan Salt- A mild salt, but adds magnesium and potassium unlike processed salts.
Worcestershire Sauce- Add a savory taste to the soup.
Taco Seasoning – Pick your favorite for a hearty, Tex-Mex flavor.
Black Beans – Cooking from scratch is simple in a pressure cooker and they add fiber and protein to your soup.
Smoked Paprika – Adds an earthy, savory and most importantly, a smokey flavor.
Ground Cumin - Adds a slight smokiness, and helps bridge flavors in tomato-based soups.
Black Pepper -Adds a slight warm bite to the soup.
Serrano or Jalapeno Pepper – Both will add heat, but a serrano pepper will bring more of a punch than a jalapeno.
Cayenne Pepper – Will give you a hot punch and add a little color.


List of Ingredients
1 ½ pound Uncooked, Boneless, Skinless Chicken Thighs- Whole
½ medium Spanish or Yellow Onion- chopped into desired size
4 Garlic Cloves- minced or finely chopped
2 Ear of Fresh Corn or 1 ½ Cups Frozen Corn
3 Cups Chicken Broth
14.5 Ounces Canned Diced or Crushed Tomatoes
4 to 7 Ounces of Canned Green Chilies
2 Teaspoons Chili Powder
2 Teaspoons Pink Himalayan Salt
2 Teaspoons Worcestershire Sauce
2 Teaspoons Taco Seasoning
¼ Cup Black Beans -From a can or freshly prepared
2 Teaspoons Smoked Paprika
2 Teaspoons Ground Cumin
1 Teaspoons Black Pepper
Optional Toppings:
½ Serrano or Jalapeno Pepper
1 Teaspoon Cayenne Pepper
Tortilla strips or crushed tortilla chips
Sour Cream (We use organic Greek Yogurt as an alternative)
Serrano or Jalapeno Peppers
Diced Red Onion
Chopped Cilantro
Cotija Cheese
Your Favorite Hot Sauce
Lime slices (Of course!)
Step 1: Combine the Ingredients
This recipe couldn't be easier to prepare! Simply add all of the ingredients in the slow cooker and put it on high for 5 to 6 hours.
Step 2: Cube the Chicken
After 4 to 5 hours, ensure the chicken reaches 165-170 degrees. Cube or shred it, return to the slow cooker, and let it soak in the broth for 30 minutes.

Step 3: Serve! This is the best part.
