Fiesta Jalapeño Lime Black Bean & Corn Salad Ingredients
For the Dressing
¼ cup fresh lime juice
3 tablespoons avocado oil
1 small garlic clove, finely grated
½ teaspoon ground cumin
¾ teaspoon sea salt
Freshly ground black pepper, to taste
For the Salad
1½ cups cooked black beans, drained and rinsed
Kernels from 2 ears fresh corn, about 1½ cups
1 red bell pepper, seeded and diced
½ cup chopped fresh cilantro, plus extra for garnish
½–1 jalapeño, seeded and finely diced, or 1 serrano, thinly sliced
⅓ cup diced red onion
3 tablespoons Cotija cheese
1 ripe but firm avocado, pitted and diced
2 tablespoons toasted pepitas, optional

Fiesta Jalapeño Lime Black Bean & Corn Salad Quick Preparation
Make the dressing: Whisk together the lime juice, avocado oil, garlic, cumin, salt, and black pepper.
Build the salad: Add the black beans, corn, bell pepper, cilantro, jalapeño, red onion, and Cotija to a large bowl.
Dress it: Pour the dressing over the salad and gently toss to combine.
Add the avocado: Fold in the diced avocado carefully so it doesn't get mashed. Or you can top the bowl with fresh cut avocado.
