  • Diced jalapeño

  1. Preheat the oven to 375°F. Lightly grease a 12-cup muffin pan.


  2. Sauté the vegetables: Add the onion and yellow bell pepper to a skillet over medium heat. Cook for 3–4 minutes until they begin to soften. Add the spinach and cook until wilted. Remove from the heat.
