Snack Attack Oat Bites Instructions

  1. Combine liquids: In a large bowl, stir together the peanut butter, honey, vanilla extract, and salt until smooth.

  2. Mix in oats: Add the oats and stir until fully incorporated into the peanut butter mixture.

  3. Add mix-ins: Fold in the mini M&M's and mini chocolate chips. If the mixture feels warm from stirring, let it rest for 5 minutes so the chocolate doesn't melt.

  4. Form balls: Roll the mixture into 1-inch balls using your hands or a small cookie scoop.

  5. Chill & Set: Place on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up. Store in an airtight container in the fridge for up to one week.

Pro-Tips

  • Chill the PB Mixture: If your peanut butter is runny or warm, pop the bowl in the fridge for 10 minutes before adding the chocolate chips so they don't melt into the mix.

  • Easy Scoop & Roll: Use a small cookie scoop for uniform bites. Keep a tiny splash of water or oil on your hands to prevent the sticky mixture from clinging to your palms as you roll.

  • Freeze for Later: Flash-freeze the rolled balls on a baking sheet for 30 minutes before transferring them to a zip-top freezer bag. They thaw in lunchboxes right around noon!

Smart Swaps & Alternatives

  • Extra Protein Boost: Stir in 1–2 tablespoons of chia seeds, ground flaxseed, or hemp hearts along with the oats for added fiber and omega-3s without altering the flavor.

  • Naturally Sweetened: Replace the mini M&M's and chocolate chips with unsweetened dried cranberries, raisins, or chopped freeze-dried strawberries for a fruit-forward energy bite.
